Description

A delicious low-carb alternative to traditional lasagna, made with zucchini noodles and packed with flavor and nutrition.

Ingredients

Scale
  • 3 medium zucchini, sliced into thin noodles
  • 1 pound ground beef or turkey
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce, sugar-free
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, cook the ground beef or turkey over medium heat until browned. Add garlic, salt, pepper, and Italian seasoning, and cook for another minute.
  3. In a bowl, mix together ricotta cheese, egg, and half of the Parmesan cheese.
  4. In a baking dish, spread a layer of marinara sauce on the bottom. Layer half of the zucchini noodles over the sauce.
  5. Add half of the meat mixture, followed by half of the ricotta mixture, and half of the mozzarella cheese.
  6. Repeat the layers, finishing with the remaining marinara sauce and topping with the remaining mozzarella and Parmesan cheese.
  7. Bake in the oven for 30-35 minutes until bubbly and golden. Let it cool for 10 minutes before serving.

Notes

  • For an even lower carb count, you can add more zucchini noodles or omit the meat altogether.
  • Feel free to personalize the recipe by adding your favorite vegetables or spices.
