- 1 medium spaghetti squash
- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon red pepper flakes
- Salt to taste
- Black pepper to taste
- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Drizzle olive oil, salt, and pepper over the cut sides of the squash and place it cut-side down on a baking sheet.
- Bake for 30-40 minutes, or until the flesh is tender and easily shreds with a fork.
- Meanwhile, heat olive oil in a skillet over medium heat.
- Add garlic and red pepper flakes and sauté for 1 minute.
- Add shrimp, season with salt and pepper, and cook until pink and opaque, about 3-4 minutes.
- Remove the spaghetti squash from the oven, shred the flesh into strands, and combine with the shrimp and garlic mixture.
- Garnish with fresh parsley and serve immediately.
Notes
- For added flavor, consider adding lemon juice before serving.
