This creamy vegan mascarpone cheese is the perfect keto-friendly alternative to traditional mascarpone. It’s rich, smooth, and full of flavor!


Ingredients

  • 1 cup raw cashews, soaked
  • 1/4 cup coconut cream
  • 2 tablespoons lemon juice
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Drain and rinse the soaked cashews.
  2. Add cashews, coconut cream, lemon juice, maple syrup, vanilla extract, and salt to a blender.
  3. Blend until smooth and creamy.
