- 1/4 cup coconut cream
- 2 tablespoons lemon juice
- 1 tablespoon maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Drain and rinse the soaked cashews.
- Add cashews, coconut cream, lemon juice, maple syrup, vanilla extract, and salt to a blender.
- Blend until smooth and creamy.
- Taste and adjust sweetness if necessary.
- Transfer to a container and refrigerate for at least 1 hour to firm up.

- For a sweeter version, add more maple syrup.
