- 2 cups cooked chicken, shredded
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 bell pepper, diced
- 1/2 cup red onion, finely chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup cilantro, chopped
- 1 cup Greek yogurt or sour cream
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cooked chicken, black beans, corn, bell pepper, red onion, cherry tomatoes, and cilantro.
- In a separate bowl, mix together the Greek yogurt, lime juice, chili powder, cumin, salt, and pepper until smooth.
- Pour the dressing over the chicken mixture and stir until everything is well coated.
- Chill in the refrigerator for at least 30 minutes before serving.
- Serve cold, garnished with additional cilantro and lime wedges if desired.
Notes
- This salad can be made a day in advance for even better flavor.
- Substitute rotisserie chicken for quicker preparation.
- For a lighter version, use plain yogurt instead of sour cream.
