A deliciously creamy and colorful chicken salad that brings a fiesta of flavors to your table!


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 bell pepper, diced
  • 1/2 cup red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cilantro, chopped
  • 1 cup Greek yogurt or sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked chicken, black beans, corn, bell pepper, red onion, cherry tomatoes, and cilantro.
  2. In a separate bowl, mix together the Greek yogurt, lime juice, chili powder, cumin, salt, and pepper until smooth.
  3. Pour the dressing over the chicken mixture and stir until everything is well coated.
  4. Chill in the refrigerator for at least 30 minutes before serving.
  5. Serve cold, garnished with additional cilantro and lime wedges if desired.

Notes

  • This salad can be made a day in advance for even better flavor.
  • Substitute rotisserie chicken for quicker preparation.
