A delicious and creamy chicken mushroom salad that’s perfect for a light meal or appetizer.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup mushrooms, sliced
- 1/2 cup celery, chopped
- 1/2 cup red onion, finely chopped
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1/4 cup fresh parsley, chopped
Instructions
- In a large bowl, combine the shredded chicken, mushrooms, celery, red onion, and parsley.
- In a separate bowl, mix together the mayonnaise, Dijon mustard, lemon juice, garlic powder, black pepper, and salt.
- Pour the dressing over the chicken mixture and stir until well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Serve on a bed of lettuce or in a sandwich.
- Can be made a day ahead for better flavor.
