Ingredients

- 1 pound ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 1 can diced green chilies
- 2 cups beef broth
- 1 tablespoon taco seasoning
- 1 cup cream cheese
- 1 cup shredded cheddar cheese
- 1 cup heavy cream
- 1 cup bell pepper, chopped
- 2 cups spinach
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cumin
Instructions
- In a large pot, cook the ground beef with the chopped onion until browned.
- Add the minced garlic and cook for another minute.
- Stir in the diced tomatoes, green chilies, beef broth, and taco seasoning.
- Bring to a boil, then reduce heat and let it simmer for 10 minutes.
- Add the cream cheese and stir until melted and smooth.
- Mix in the shredded cheddar cheese and heavy cream.
- Add the bell pepper and spinach, cooking until the spinach is wilted.
- Season with salt, black pepper, and cumin.
- Serve hot, garnished with extra cheese if desired.
Notes
- This soup can be made spicy by adding jalapenos.
- Store leftovers in the refrigerator for up to 4 days.
