Description

A rich and creamy taco soup that is low in carbs and filled with delicious flavors.


Ingredients

  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 can diced green chilies
  • 2 cups beef broth
  • 1 tablespoon taco seasoning
  • 1 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • 1 cup bell pepper, chopped
  • 2 cups spinach
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cumin

Instructions

  1. In a large pot, cook the ground beef with the chopped onion until browned.
  2. Add the minced garlic and cook for another minute.
  3. Stir in the diced tomatoes, green chilies, beef broth, and taco seasoning.
  4. Bring to a boil, then reduce heat and let it simmer for 10 minutes.
  5. Add the cream cheese and stir until melted and smooth.
  6. Mix in the shredded cheddar cheese and heavy cream.
  7. Add the bell pepper and spinach, cooking until the spinach is wilted.
  8. Season with salt, black pepper, and cumin.
  9. Serve hot, garnished with extra cheese if desired.

Notes

  • This soup can be made spicy by adding jalapenos.
