Ingredients

- 1 medium cauliflower, riced
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 carrots, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon turmeric
- 1/2 teaspoon cumin
- 1/4 cup peas
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion and sauté until translucent.
- Stir in carrots and bell pepper; cook for 5 minutes.
- Add garlic and cook for an additional minute.
- Stir in riced cauliflower, salt, pepper, turmeric, and cumin.
- Cook for about 5-7 minutes until the cauliflower is tender.
- Mix in peas and parsley before serving.
Notes
- For extra flavor, add some lemon juice before serving.
- Great as a base for protein like chicken or shrimp.
