Description

A healthy and flavorful side dish made with cauliflower rice and vegetables.


Ingredients

  • 1 medium cauliflower, riced
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 carrots, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cumin
  • 1/4 cup peas
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and sauté until translucent.
  3. Stir in carrots and bell pepper; cook for 5 minutes.
  4. Add garlic and cook for an additional minute.
  5. Stir in riced cauliflower, salt, pepper, turmeric, and cumin.
  6. Cook for about 5-7 minutes until the cauliflower is tender.
  7. Mix in peas and parsley before serving.

Notes

  • For extra flavor, add some lemon juice before serving.
  • Great as a base for protein like chicken or shrimp.
