Description

This creamy Cauliflower Mac ‘N Cheese is loaded with English cheddar and crispy bacon, making it a delicious comfort food alternative.


Ingredients

  • 1 head cauliflower, cut into florets
  • 8 ounces elbow macaroni
  • 4 strips bacon, cooked and crumbled
  • 2 cups shredded English cheddar cheese
  • 2 cups milk
  • 1/4 cup all-purpose flour
  • 2 tablespoons butter
  • 1 teaspoon mustard powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, bring salted water to boil. Cook the elbow macaroni until al dente, about 8 minutes. Drain and set aside.
  3. Steam the cauliflower florets until tender, about 5 minutes.
  4. In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.
  5. Gradually whisk in milk and bring to a simmer, stirring constantly until thickened.
  6. Add mustard powder, garlic powder, salt, and pepper to the sauce.
  7. Mix in the cheddar cheese until melted and smooth.
  8. Fold in the cooked macaroni, cauliflower, and crumbled bacon.
  9. Transfer to a baking dish and top with additional cheese if desired.
  10. Bake for 20-25 minutes until bubbly and golden on top.
