Description

A low-carb alternative to traditional fried rice made with cauliflower instead of grains, rich in flavor and packed with vegetables.


Ingredients

Scale
  • 1 head cauliflower, grated or riced
  • 2 tablespoons vegetable oil
  • 2 eggs, beaten
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 3 green onions, sliced
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced

Instructions

  1. Heat vegetable oil in a large pan over medium heat.
  2. Add garlic and stir-fry for 30 seconds.
  3. Add the riced cauliflower and cook for 5-7 minutes until tender.
  4. Push the cauliflower to the side and add beaten eggs, scrambling until cooked.
  5. Mix the eggs with the cauliflower.
  6. Add mixed vegetables and green onions, stirring for another 3-4 minutes.
  7. Pour in soy sauce and sesame oil, mixing well.
  8. Serve hot and enjoy!

  • For a vegetarian option, skip the eggs or use a plant-based alternative.
