Description
A low-carb alternative to traditional fried rice made with cauliflower instead of grains, rich in flavor and packed with vegetables.
Ingredients

- 1 head cauliflower, grated or riced
- 2 tablespoons vegetable oil
- 2 eggs, beaten
- 1 cup mixed vegetables (peas, carrots, corn)
- 3 green onions, sliced
- 3 tablespoons soy sauce
- 1 teaspoon sesame oil
- 1 clove garlic, minced
Instructions
- Heat vegetable oil in a large pan over medium heat.
- Add garlic and stir-fry for 30 seconds.
- Add the riced cauliflower and cook for 5-7 minutes until tender.
- Push the cauliflower to the side and add beaten eggs, scrambling until cooked.
- Mix the eggs with the cauliflower.
- Add mixed vegetables and green onions, stirring for another 3-4 minutes.
- Pour in soy sauce and sesame oil, mixing well.
- Serve hot and enjoy!
Notes
- For a vegetarian option, skip the eggs or use a plant-based alternative.
- Feel free to add more vegetables like bell peppers or broccoli.
