Description

A hearty and flavorful beef stew perfect for carnivore diets.


Ingredients

Scale
  • 2 pounds beef chuck, cut into cubes
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 4 cups beef broth
  • 3 cloves garlic, minced
  • 1 tablespoon dried thyme
  • 2 tablespoons olive oil
  • 2 cups mushrooms, sliced
  • 1 medium onion, chopped
  • 1 cup carrots, chopped (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Season beef cubes with salt and pepper, then brown in the pot for about 5 minutes.
  3. Add onions and garlic, sauté until translucent.
  4. Stir in thyme and mushrooms, continue to cook for another 3 minutes.
  5. Add beef broth and bring to a simmer.
  6. Cover and reduce heat, let stew cook for 2 hours or until beef is tender.
  7. If using carrots, add them in the last 30 minutes of cooking.

Notes

  • Use grass-fed beef for higher quality.
  • This stew is best served the next day for enhanced flavors.
  • Skim off the fat from the top before serving if desired.
