Ingredients

- 2 pounds beef chuck, cut into cubes
- 1 tablespoon salt
- 1 teaspoon black pepper
- 4 cups beef broth
- 3 cloves garlic, minced
- 1 tablespoon dried thyme
- 2 tablespoons olive oil
- 2 cups mushrooms, sliced
- 1 medium onion, chopped
- 1 cup carrots, chopped (optional)
Instructions
- In a large pot, heat olive oil over medium heat.
- Season beef cubes with salt and pepper, then brown in the pot for about 5 minutes.
- Add onions and garlic, sauté until translucent.
- Stir in thyme and mushrooms, continue to cook for another 3 minutes.
- Add beef broth and bring to a simmer.
- Cover and reduce heat, let stew cook for 2 hours or until beef is tender.
- If using carrots, add them in the last 30 minutes of cooking.
Notes
- Use grass-fed beef for higher quality.
- This stew is best served the next day for enhanced flavors.
- Skim off the fat from the top before serving if desired.
