This vibrant and healthy dish features homemade noodles made from broccoli stems, tossed in a flavorful sesame ginger dressing.


Ingredients

  • 4 cups broccoli stems, julienned
  • 2 tablespoons sesame oil
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey
  • 1 tablespoon sesame seeds
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds for garnish

Instructions

  1. Using a mandoline or sharp knife, julienne the broccoli stems into noodle-like strips.
  2. In a large bowl, combine the sesame oil, grated ginger, soy sauce, rice vinegar, and honey to create the dressing.
  3. Add the julienned broccoli stems and toss well to coat.
  4. Let the noodles marinate for at least 10 minutes to absorb the flavors.
  5. Top with chopped green onions and sesame seeds before serving.
