Description

Delicious and cheesy quesadillas that are keto-friendly and perfect for a quick meal.


Ingredients

  • 4 large low-carb tortillas
  • 2 cups shredded cheese (cheddar or mozzarella)
  • 1 cup cooked chicken, shredded
  • 1 bell pepper, sliced
  • 1 small onion, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon taco seasoning

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add sliced onion and bell pepper, cooking until softened.
  3. Mix in garlic powder and taco seasoning, then add shredded chicken.
  4. On a separate skillet, place one tortilla down, add a layer of cheese, the chicken mixture, and then another layer of cheese. Top with another tortilla.
  5. Cook on both sides until golden brown and cheese is melted.
  6. Cut into wedges and serve hot.

Notes

  • For a vegetarian version, omit the chicken and add more vegetables.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
