Ingredients

- 4 large low-carb tortillas
- 2 cups shredded cheese (cheddar or mozzarella)
- 1 cup cooked chicken, shredded
- 1 bell pepper, sliced
- 1 small onion, sliced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon taco seasoning
Instructions
- Heat olive oil in a skillet over medium heat.
- Add sliced onion and bell pepper, cooking until softened.
- Mix in garlic powder and taco seasoning, then add shredded chicken.
- On a separate skillet, place one tortilla down, add a layer of cheese, the chicken mixture, and then another layer of cheese. Top with another tortilla.
- Cook on both sides until golden brown and cheese is melted.
- Cut into wedges and serve hot.
Notes
- For a vegetarian version, omit the chicken and add more vegetables.
- Store leftovers in an airtight container in the fridge for up to 3 days.
