Description

Deliciously moist cookies that combine the goodness of zucchini with chocolate chips for a tasty treat.


Ingredients

  • 1 cup grated zucchini
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, cream the butter, brown sugar, and granulated sugar together.
  3. Add the egg and vanilla extract, mixing well.
  4. Stir in the grated zucchini.
  5. In another bowl, whisk together flour, baking soda, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  7. Fold in the chocolate chips.
  8. Drop spoonfuls of dough onto a baking sheet.
  9. Bake for 12-15 minutes or until golden brown.
  10. Let cool on the sheet for a few minutes before transferring to a wire rack.
