Ingredients

- 2 cups almond flour
- 1/4 cup coconut flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsweetened applesauce
- 4 large eggs
- 1/2 cup shredded cheese
- 1/4 cup chopped green onions
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix the almond flour, coconut flour, baking powder, and salt.
- In another bowl, whisk together the applesauce, eggs, and cheese.
- Combine the wet and dry ingredients, then fold in the green onions.
- Scoop the mixture into the muffin tin, filling each cup about 2/3 full.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Allow to cool before serving.
Notes
- These muffins can be stored in the refrigerator for up to a week.
- They freeze well for longer storage.
