Description

A hearty and comforting soup that captures the flavors of Tuscany while remaining low in carbs, perfect for a Keto diet.


Ingredients

  • 1 pound Italian sausage
  • 1 cup diced onions
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes
  • 1 cup heavy cream
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, brown the sausage over medium heat until fully cooked.
  2. Add onions and garlic, cooking until the onions are translucent.
  3. Stir in chicken broth, diced tomatoes, Italian seasoning, and red pepper flakes.
  4. Bring to a simmer and let cook for 10 minutes.
  5. Add spinach and heavy cream, stirring to combine.
  6. Season with salt and pepper to taste.
