- 4 sheets nori
- 1 cup cauliflower rice
- 1/2 cup cream cheese
- 1 cucumber, sliced
- 1 avocado, sliced
- 8 ounces smoked salmon
- 2 tablespoons soy sauce or tamari
- 1 tablespoon sesame seeds (optional)
Instructions
- Prepare the cauliflower rice by pulsing cauliflower florets in a food processor until finely chopped.
- Lay a sheet of nori on a bamboo sushi mat.
- Spread a thin layer of cauliflower rice over the nori.
- Layer cream cheese, cucumber, avocado, and smoked salmon on top.
- Roll the sushi tightly, using the bamboo mat to help.
- Slice the roll into bite-sized pieces and sprinkle with sesame seeds if desired.
- Serve with soy sauce or tamari.
