Delicious low-carb sushi rolls made without rice, perfect for a keto lifestyle!


Ingredients

  • 4 sheets nori
  • 1 cup cauliflower rice
  • 1/2 cup cream cheese
  • 1 cucumber, sliced
  • 1 avocado, sliced
  • 8 ounces smoked salmon
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. Prepare the cauliflower rice by pulsing cauliflower florets in a food processor until finely chopped.
  2. Lay a sheet of nori on a bamboo sushi mat.
  3. Spread a thin layer of cauliflower rice over the nori.
  4. Layer cream cheese, cucumber, avocado, and smoked salmon on top.
  5. Roll the sushi tightly, using the bamboo mat to help.
  6. Slice the roll into bite-sized pieces and sprinkle with sesame seeds if desired.
  7. Serve with soy sauce or tamari.
