- 1/2 cup erythritol sweetener
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 tsp almond extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and erythritol until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the almond flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
- Fill a cookie press with the dough and press cookies onto a baking sheet lined with parchment paper.
- Bake in the preheated oven for 12-15 minutes, or until the edges are golden.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
