- 1/2 cup shredded mozzarella cheese
- 1/4 cup cream cheese
- 2 large eggs
- 1 teaspoon baking powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 cup pepperoni, chopped
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a mixing bowl, combine almond flour, mozzarella cheese, cream cheese, eggs, baking powder, Italian seasoning, garlic powder, and salt. Mix until well combined.
- Fold in the chopped pepperoni.
- Divide the batter evenly among the muffin cups.
- Bake for 20-25 minutes, or until golden brown and a toothpick inserted comes out clean.
- Allow to cool for a few minutes before serving.
