- 1 1/2 cups almond flour
- 1/4 cup erythritol
- 1/2 cup unsalted butter, melted
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 3 large eggs
- 3 cups pecans, chopped
- 1 cup sugar-free maple syrup
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine almond flour, erythritol, melted butter, and salt to form the crust.
- Press the mixture into the bottom of a greased baking dish and bake for 10 minutes.
- In another bowl, whisk together eggs, vanilla extract, and sugar-free maple syrup.
- Add chopped pecans to the mixture and stir to combine.
- Pour the filling over the crust and spread evenly.
- Bake for an additional 25-30 minutes until set.
- Let cool before slicing into bars.
Notes
- For added flavor, sprinkle some cinnamon into the filling.
- Store leftovers in the refrigerator for up to a week.
