Description

Delicious and easy keto-friendly peanut butter cups.


Ingredients

Scale
  • 1 cup natural peanut butter
  • 1/2 cup cocoa powder
  • 1/4 cup coconut oil
  • 1/4 cup erythritol (or preferred sweetener)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. In a mixing bowl, combine peanut butter, cocoa powder, coconut oil, erythritol, vanilla extract, and salt until well mixed.
  2. Line a muffin tin with paper liners.
  3. Spoon the mixture into the liners, filling them about halfway.
  4. Place in the fridge to set for about 30 minutes.
  5. After the first layer has set, add another layer of the mixture if desired.
  6. Let them chill until firm, about 1 hour.
  7. Remove from liners and enjoy.

Notes

  • Store in the refrigerator for up to two weeks.
  • For a nut-free version, substitute peanut butter with sunflower seed butter.
