Delicious and easy keto-friendly peanut butter cups.
Ingredients

- 1 cup natural peanut butter
- 1/2 cup cocoa powder
- 1/4 cup coconut oil
- 1/4 cup erythritol (or preferred sweetener)
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- In a mixing bowl, combine peanut butter, cocoa powder, coconut oil, erythritol, vanilla extract, and salt until well mixed.
- Line a muffin tin with paper liners.
- Spoon the mixture into the liners, filling them about halfway.
- Place in the fridge to set for about 30 minutes.
- After the first layer has set, add another layer of the mixture if desired.
- Let them chill until firm, about 1 hour.
- Remove from liners and enjoy.
Notes
- Store in the refrigerator for up to two weeks.
- For a nut-free version, substitute peanut butter with sunflower seed butter.
