Description

Delicious and healthy keto-friendly oatmeal cookies that satisfy your sweet tooth without the carbs.


Ingredients

  • 1 cup almond flour
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup granulated erythritol
  • 1/4 cup coconut oil, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup sugar-free chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the almond flour, shredded coconut, erythritol, baking powder, salt, and cinnamon.
  3. In another bowl, combine the melted coconut oil, eggs, and vanilla extract.
  4. Mix the wet ingredients into the dry ingredients until well combined.
  5. Fold in the sugar-free chocolate chips.
  6. Drop spoonfuls of the dough onto a lined baking sheet.
  7. Bake for 10-12 minutes until golden brown.
  8. Allow to cool before serving.
