Description

Delicious chocolate-filled cookies that are perfect for a low-carb diet.


Ingredients

  • 1 cup almond flour
  • 1/4 cup cocoa powder
  • 1/4 cup erythritol sweetener
  • 1/4 cup butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sugar-free chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine almond flour, cocoa powder, erythritol, baking powder, and salt.
  3. In another bowl, cream the butter and erythritol until fluffy. Add the egg and vanilla extract, mixing until well combined.
  4. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
  5. Chill the dough in the refrigerator for 30 minutes.
  6. Form the dough into small balls and place them on the baking sheet.
  7. Press a chocolate chip into the center of each cookie and flatten slightly.
  8. Bake for 12-15 minutes or until the cookies are set.
  9. Let them cool before serving.
