Description

A delicious, low-carb eggnog recipe perfect for the holiday season.


Ingredients

  • 4 large egg yolks
  • 1/2 cup erythritol or preferred sweetener
  • 2 cups unsweetened almond milk
  • 1 cup heavy cream
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 4 large egg whites
  • 1/2 cup bourbon or rum (optional)

Instructions

  1. In a mixing bowl, whisk egg yolks and sweetener until creamy.
  2. In a saucepan, heat almond milk and heavy cream over medium heat until warm.
  3. Slowly pour the warm mixture into the egg yolk mixture, whisking continuously.
  4. Return the mixture to the saucepan and cook on low heat until it thickens slightly.
  5. Stir in vanilla extract, nutmeg, and cinnamon.
  6. In a separate bowl, beat the egg whites until stiff peaks form.
  7. Gently fold the egg whites into the eggnog mixture.
  8. If using, add bourbon or rum and stir well.
  9. Serve chilled with additional nutmeg on top.

Notes

  • Make sure to use pasteurized eggs to reduce the risk of salmonella.
