Ingredients

- 4 large egg yolks
- 1/2 cup erythritol or preferred sweetener
- 2 cups unsweetened almond milk
- 1 cup heavy cream
- 1 tablespoon vanilla extract
- 1 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon
- 4 large egg whites
- 1/2 cup bourbon or rum (optional)
Instructions
- In a mixing bowl, whisk egg yolks and sweetener until creamy.
- In a saucepan, heat almond milk and heavy cream over medium heat until warm.
- Slowly pour the warm mixture into the egg yolk mixture, whisking continuously.
- Return the mixture to the saucepan and cook on low heat until it thickens slightly.
- Stir in vanilla extract, nutmeg, and cinnamon.
- In a separate bowl, beat the egg whites until stiff peaks form.
- Gently fold the egg whites into the eggnog mixture.
- If using, add bourbon or rum and stir well.
- Serve chilled with additional nutmeg on top.
Notes
- Make sure to use pasteurized eggs to reduce the risk of salmonella.
- Adjust the sweetness according to personal preference.
