- 2 large eggs
- 1 cup almond flour
- 1/2 cup unsweetened almond milk
- 1 tablespoon melted butter
- 1/2 teaspoon vanilla extract
- 1 pinch salt
Instructions
- In a mixing bowl, whisk together the eggs, almond flour, almond milk, melted butter, vanilla extract, and salt until smooth.
- Heat a non-stick skillet over medium heat and lightly grease it with butter.
- Pour about 1/4 cup of the batter into the skillet, swirling to spread evenly.
- Cook for 1-2 minutes until the edges start to lift and the bottom is golden brown.
- Flip and cook for another minute. Repeat with the remaining batter.
- Serve with your favorite low-carb toppings.
Notes
- Store any leftover crepes in the refrigerator.
- Reheat in a skillet or microwave before serving.
