- 1 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1/2 cup unsweetened shredded coconut
- 1/2 cup pecans, chopped
- 1/4 cup erythritol or preferred sweetener
- 1/4 cup butter, melted
- 1 cup sugar-free cranberry sauce
- 1/4 cup sugar-free chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a mixing bowl, combine almond flour, cocoa powder, shredded coconut, chopped pecans, erythritol, and melted butter until well mixed.
- Press the mixture firmly into the bottom of the prepared baking pan to form a crust.
- Bake the crust for 10-12 minutes, then remove from the oven and let cool slightly.
- Spread the sugar-free cranberry sauce evenly over the crust.
- Sprinkle the sugar-free chocolate chips on top of the cranberry sauce.
- Return the pan to the oven and bake for an additional 15-20 minutes.
- Allow to cool completely before slicing into bars.
Notes
- For added flavor, consider adding a pinch of cinnamon to the crust mixture.
- Store leftover bars in an airtight container in the refrigerator.
