- 1/4 cup coconut flour
- 1/2 cup erythritol
- 1 tablespoon baking powder

- 4 large eggs
- 1/2 cup unsweetened almond milk
- 1/4 cup melted coconut oil
- 1/2 cup cranberries (dried and unsweetened)
- 2 teaspoons cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, and salt.
- In a separate bowl, whisk together eggs, almond milk, and melted coconut oil.
- Mix the wet ingredients into the dry ingredients until a dough forms.
- Roll the dough out and sprinkle with cranberries and cinnamon.
- Roll it up tightly and slice into rolls.
- Place the rolls onto a baking sheet and bake for 20-25 minutes.
- Let cool, then serve.
