- 1/4 cup coconut oil, melted
- 4 large eggs
- 1/2 cup unsweetened almond milk
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon mixed spice (cinnamon, nutmeg, etc.)
- 1/2 cup mixed nuts, chopped
- 1/2 cup sugar-free dried fruits
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, blend together almond flour, cocoa powder, and erythritol.
- Add melted coconut oil, eggs, almond milk, and vanilla extract. Mix until smooth.
- Stir in baking powder, mixed spice, chopped nuts, and dried fruits.
- Pour the batter into a greased pudding mold.
- Bake for 35-40 minutes or until a toothpick comes out clean.
- Let it cool before serving.
