Delicious and low-carb cheesecake bars featuring fresh blackberries.


Ingredients

  • 2 cups almond flour
  • 1/4 cup granulated erythritol
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated erythritol
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup fresh blackberries

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix almond flour, erythritol, and melted butter until combined.
  3. Press the mixture into the bottom of a greased baking dish.
  4. In another bowl, beat cream cheese and erythritol until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Stir in vanilla extract and gently fold in blackberries.
  7. Pour the cream cheese mixture over the crust.
  8. Bake for 30-35 minutes until set and edges are lightly browned.
  9. Let it cool before cutting into bars.
