Ingredients

- 2 cups almond flour
- 1/4 cup granulated erythritol
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated erythritol
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup fresh blackberries
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix almond flour, erythritol, and melted butter until combined.
- Press the mixture into the bottom of a greased baking dish.
- In another bowl, beat cream cheese and erythritol until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in vanilla extract and gently fold in blackberries.
- Pour the cream cheese mixture over the crust.
- Bake for 30-35 minutes until set and edges are lightly browned.
- Let it cool before cutting into bars.
Notes
- For a sweeter taste, adjust the erythritol to your preference.
- Store leftovers in the refrigerator for up to a week.
