- 4 bell peppers
- 1 pound ground beef
- 1 cup riced cauliflower
- 1 cup shredded mozzarella cheese
- 1/2 cup diced tomatoes
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- salt to taste
- pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet, cook ground beef until browned.
- Add riced cauliflower, tomatoes, Italian seasoning, garlic powder, onion powder, salt, and pepper to the meat mixture.
- Stuff each bell pepper with the meat mixture.
- Top each stuffed pepper with shredded mozzarella cheese.
- Place peppers in a baking dish and cover with foil.
- Bake for 25-30 minutes, then remove the foil and bake for an additional 10 minutes until cheese is bubbly.
Notes
- Feel free to add other vegetables to the stuffing for extra flavor.
- These can be made ahead of time and stored in the refrigerator before baking.
