Description

A delicious low-carb meal featuring bell peppers stuffed with a savory meat and cheese filling, perfect for a keto diet.


Ingredients

Scale
  • 4 bell peppers
  • 1 pound ground beef
  • 1 cup riced cauliflower
  • 1 cup shredded mozzarella cheese
  • 1/2 cup diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook ground beef until browned.
  4. Add riced cauliflower, tomatoes, Italian seasoning, garlic powder, onion powder, salt, and pepper to the meat mixture.
  5. Stuff each bell pepper with the meat mixture.
  6. Top each stuffed pepper with shredded mozzarella cheese.
  7. Place peppers in a baking dish and cover with foil.
  8. Bake for 25-30 minutes, then remove the foil and bake for an additional 10 minutes until cheese is bubbly.

Notes

  • Feel free to add other vegetables to the stuffing for extra flavor.
  • These can be made ahead of time and stored in the refrigerator before baking.
