Description

A creamy, delicious, and healthy ice cream filled with protein and the rich flavor of pistachios.


Ingredients

Scale
  • 2 cups unsweetened almond milk
  • 1 cup Greek yogurt
  • 1 cup pistachios, shelled and chopped
  • 1/2 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. In a blender, combine the almond milk, Greek yogurt, honey or maple syrup, vanilla extract, and salt. Blend until smooth.
  2. Stir in the chopped pistachios.
  3. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  4. Transfer the ice cream to a container and freeze for at least 4 hours until firm.

Notes

  • For a vegan option, use a plant-based yogurt.
  • Add additional pistachios on top for garnish.
  • Let the ice cream sit at room temperature for a few minutes before scooping for easier serving.
