Ingredients

- 2 cups unsweetened almond milk
- 1 cup Greek yogurt
- 1 cup pistachios, shelled and chopped
- 1/2 cup honey or maple syrup
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- In a blender, combine the almond milk, Greek yogurt, honey or maple syrup, vanilla extract, and salt. Blend until smooth.
- Stir in the chopped pistachios.
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
- Transfer the ice cream to a container and freeze for at least 4 hours until firm.
Notes
- For a vegan option, use a plant-based yogurt.
- Add additional pistachios on top for garnish.
- Let the ice cream sit at room temperature for a few minutes before scooping for easier serving.
