This Easy Low Carb & Keto Coleslaw is a fantastic side dish that allows you to enjoy the crunch of cabbage without the carbs!


Ingredients

  • 4 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon granulated erythritol
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, combine the shredded cabbage and shredded carrots.
  2. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, erythritol, salt, and black pepper.
