- 6 large eggs
- 3 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon hot sauce
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons sliced green onions
Instructions
- Hard boil the eggs by placing them in a pot and covering with cold water. Bring to a boil, then cover and remove from heat. Let sit for 12 minutes.
- Cool the eggs in ice water for 5 minutes, then peel.
- Slice the eggs in half lengthwise and remove the yolks.
- In a mixing bowl, combine the yolks, mayonnaise, Dijon mustard, hot sauce, smoked paprika, salt, and black pepper.
- Mix until smooth and creamy.
- Spoon or pipe the yolk mixture back into the egg whites.
- Garnish with sliced green onions.

- For added crunch, consider mixing in some finely chopped celery.
