Instructions
- In a large bowl, combine grated zucchini, grated carrots, diced bell pepper, and chopped green onions.
- In another bowl, mix flour, egg, baking powder, salt, and black pepper.
- Combine the wet ingredients with the veggie mixture and stir until well combined.
- Heat oil in a skillet over medium heat.
- Drop spoonfuls of the fritter mixture into the hot oil and flatten slightly.
- Cook for 3-4 minutes per side until golden brown and crispy.
- Remove and drain on paper towels.
- For the dip, mix Greek yogurt, diced cucumber, salt, and dill in a bowl.
- Serve the fritters warm with the creamy cucumber dip.
