These crispy veggie fritters are perfect for a healthy snack or appetizer, paired with a creamy cucumber dip for added flavor.


Ingredients

  • 1 cup grated zucchini
  • 1 cup grated carrots
  • 1/2 cup diced bell pepper
  • 1/2 cup chopped green onions
  • 1/2 cup all-purpose flour
  • 1 egg
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup cooking oil

Instructions

  1. In a large bowl, combine grated zucchini, grated carrots, diced bell pepper, and chopped green onions.
  2. In another bowl, mix flour, egg, baking powder, salt, and black pepper.
  3. Combine the wet ingredients with the veggie mixture and stir until well combined.
  4. Heat oil in a skillet over medium heat.
  5. Drop spoonfuls of the fritter mixture into the hot oil and flatten slightly.
  6. Cook for 3-4 minutes per side until golden brown and crispy.
  7. Remove and drain on paper towels.
  8. For the dip, mix Greek yogurt, diced cucumber, salt, and dill in a bowl.
  9. Serve the fritters warm with the creamy cucumber dip.

Notes
