- 1 pound chicken breast, diced
- 1 tablespoon cajun seasoning
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 3 cups chicken broth
- 1 cup heavy cream
- 1 cup corn
- 2 tablespoons olive oil
- salt to taste

Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced chicken and cajun seasoning, cooking until the chicken is browned.
- Add onion, garlic, and bell pepper. Sauté until vegetables are tender.
- Pour in chicken broth and bring to a boil.
- Add heavy cream and corn, stirring to combine.
- Reduce heat and simmer for 15 minutes.
- Season with salt and pepper to taste before serving.
Notes
- This soup can be made ahead of time and refrigerated.
- Reheat on stove over medium heat before serving.
