Description

A delicious low-carb casserole that combines the flavors of cheeseburgers with spaghetti squash.


Ingredients

  • 1 medium spaghetti squash
  • 1 pound ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • 2 tablespoons ketchup
  • 1 tablespoon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut spaghetti squash in half and scoop out seeds.
  3. Place squash cut side down on a baking sheet and bake for 40-45 minutes until tender.
  4. Meanwhile, in a skillet, cook ground beef with diced onion and garlic until browned.
  5. Add tomatoes, ketchup, mustard, salt, pepper, and paprika to the beef mixture; stir and cook for another 5 minutes.
  6. Once spaghetti squash is cooked, scrape out the strands with a fork.
  7. In a large bowl, combine spaghetti squash with beef mixture and half the cheddar cheese.
  8. Transfer to a greased baking dish, top with remaining cheese, and bake for 20 minutes until cheese is bubbly.
  9. Let cool slightly before serving.

  • For a vegetarian option, substitute ground beef with lentils or mushrooms.
