A delicious low-carb casserole that combines the flavors of cheeseburgers with spaghetti squash.

- 1 medium spaghetti squash
- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup diced tomatoes
- 1 cup shredded cheddar cheese
- 2 tablespoons ketchup
- 1 tablespoon mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
Instructions
- Preheat oven to 375°F (190°C).
- Cut spaghetti squash in half and scoop out seeds.
- Place squash cut side down on a baking sheet and bake for 40-45 minutes until tender.
- Meanwhile, in a skillet, cook ground beef with diced onion and garlic until browned.
- Add tomatoes, ketchup, mustard, salt, pepper, and paprika to the beef mixture; stir and cook for another 5 minutes.
- Once spaghetti squash is cooked, scrape out the strands with a fork.
- In a large bowl, combine spaghetti squash with beef mixture and half the cheddar cheese.
- Transfer to a greased baking dish, top with remaining cheese, and bake for 20 minutes until cheese is bubbly.
- Let cool slightly before serving.
Notes
- For a vegetarian option, substitute ground beef with lentils or mushrooms.
- Top with diced pickles or relish for added flavor.
